On request we stamp recipes of tyrolean dishes for our guests. Whether South Tyrolean dumplings, herb or light healthy dishes. Tips and Tricks are included!

Cheese dumplings of gray cheese on sautéed leeks from South Tyrol
Serves 4
For the dumplings:
* 100 gr bread dumplings (from the bakery or diced old rolls)
* 100 gr grated cheese Tyrolean Grey
* Chives
* 1 small onion
* 2 eggs
* Some water
* Salt and freshly ground pepper
* Butter and Parmesan
For the leeks:
* 1 leek
* 12 cherry tomatoes
* Salt, pepper
* A little butter and olive oil
Preparation:
Dry all ingredients in a bowl. Beat the eggs with some water and pour over the ingredients. Mix with your hands carefully (do not knead, please) and let rest for 15 minutes. Wet hands and now dumplings in any shapes and size 5 - simmer for 10 minutes easy. The leeks in quarters lengthwise and then cut into 1 cm strips and quarter the cherry tomatoes. Now the leeks in butter and olive oil, sauté - it should not be brown, add salt and pepper, and after about 2 - 3 minutes, add tomatoes and a little note-Wince.
The dumplings in the leeks sprinkle with Parmesan cheese and with hot butter. A little sprinkle of chives.
